Warm weather demands new dishes for entertaining

Warm weather means more get-togethers, and what’s a party without good food?
A recipe for Lemon Pepper Garbanzo Salad, from the kitchens of Spice Islands, is a simple, make-ahead salad starring garbanzo beans, requested by R.A.V. of Chicago. Also, Jody Scott-Harris of Glenview shares her “best ever” Glazed Lemon Cookies for J.S. of Chicago, and regular Swap Shop contributor Jeannine Konopacki of Chicago answers a recipe request for Turtle Brownies from S.P. of Dolton.
All three recipes will be summer-long solutions for get-togethers of family and friends, with the Glazed Lemon Cookies worthy of adding to special occasion menus such as bridal or baby showers or Mother’s Day.
To make Turtle Brownies: In large bowl, combine 2 cups flour, 1 cup packed light brown sugar and 8 tablespoons (½ cup) butter until mixture resembles coarse crumbs. Press mixture into ungreased 9x13-inch pan. Sprinkle 1½ cups pecan halves evenly over flour mixture.
Next, in small saucepan, over low to medium heat, cook ½ cup packed light brown sugar and 10 tablespoons (2/3 cup) butter, stirring constantly until mixture begins to boil. Boil 1 minute. Pour over pecans. Bake brownies at 350 degrees for 20 to 25 minutes until firm. Immediately after removing brownies from oven, sprinkle 11½-ounce bag milk chocolate chips over baked mixture. As chips melt, spread chocolate over mixture. Allow brownies to cool before cutting into bars.
